This Fresh Strawberry Cake is perfect for St. Valentine's Day!
The strawberries, coconut, & chopped walnuts add such a delicious touch!
I find most cake recipes too sweet for my taste, so I usually decrease the sugar. That's the case with this recipe I found a few years ago. It was a huge hit with the family...myself included! And, since it's made from a mix, it's very quick and easy.
You can use a standard mix, but if you try Pamela's Cake Mix, you won't be able to tell it's Gluten Free, and it'll be healthier for you(I know, healthy cake seems like an oxymoron, but it's so much better than most things you'll find in a store).
I also love Simply Delish natural gel dessert instead of Jell-O. It's gluten free, uses xylitol as its sweetener, is high in vitamin C, and is even vegan-friendly! It can be difficult to find, but you can get it here.
I use both frozen and fresh strawberries.
First, I blend the frozen berries...
...until I have a smoothie consistency like this:
In the stand mixer, I blend the cake mix, eggs, natural gel dessert powder, mashed strawberries, melted coconut oil, and coconut milk.
Once I have a nice, smooth consistency, I add some organic coconut flakes and the crushed walnuts.
Then I prep my heart shaped cake pans.
Of course, you can make this any time of the year in round cake pans. I know it may seem silly to keep cake pans I only use once a year, but these little family traditions are more important than you would ever believe!
Just ask your kids. ;)
Yummmmm...look at that beautiful all-natural strawberry cake batter...no artificial anything!
Once the batter is poured in the cake pans, bake at 325 degrees for 40-45 minutes.
Frost and decorate with fresh strawberries.

FRESH STRAWBERRY CAKE RECIPE
~1 package white cake mix
~1 package strawberry gel dessert
~1 1/4 cup mashed strawberries
~1 C melted coconut oil
~1/2 C coconut milk
~1/2 C shredded coconut
~1/2 C finely chopped walnuts
~Fresh strawberries for garnish
Preheat oven to 325. Grease & flour cake pans. Blend fresh or frozen strawberries until smooth (Reserve 1/4 cup for frosting). Add all ingredients except coconut flakes and nuts to mixing bowl and beat on low speed until just blended. Scrape sides of bowl and blend on medium speed for 4 minutes. Stir in coconut flakes and nuts. Pour into prepared pans.
Bake at 325 for 40-45 minutes, or until toothpick comes out clean. Allow to cool, then remove from pans.
FRESH STRAWBERRY FROSTING RECIPE
(all ingredients at room temp.)
~8 oz cream cheese
~1/2 C unsalted butter
~1/4 C mashed strawberries
~3-4 C confectioner's sugar
~2 tsp vanilla
Cream butter and cream cheese. Mix in strawberries and vanilla. Add powdered sugar until desired consistency.
